Tucked away in Trieste’s industrial zone, DEMUS has spent decades perfecting something many coffee lovers still approach with suspicion: decaf.
Founded in 1962 as Coffex Italiana before adopting the name DEMUS in 1981, the company has quietly become one of Italy’s leading specialists in decaffeinated coffee, combining laboratory research with increasingly sophisticated processing techniques aimed at producing smoother, more digestible blends without sacrificing flavor.
At a time when specialty coffee culture is booming, decaf is also shedding its old reputation. Companies like DEMUS are part of a broader shift that treats caffeine-free coffee not as a compromise, but as a product worthy of the same attention to quality and craftsmanship as traditional espresso blends.
