A Festival in Sauris Explores How the Senses Shape the Taste of Food

The mountain village of Sauris will explore how sight, sound, smell, touch and taste shape the way people experience food during Gebele, a two-day festival on Oct. 3 and 4.

Held in Sauris di Sotto, the event will bring together local producers, chefs and visitors for tastings, workshops and sensory experiments centered on products including Sauris prosciutto, mountain cheeses, honey, herbs and the local Slow Food–recognized bean. 

The program will include a sensory market, cooking demonstrations and hands-on workshops. Massimiliano Zampini, a professor of general psychology at the University of Trento, will discuss how the brain combines information from different senses to create the perception of flavor. 

A highlight will be “The Dinner You Listen To” on Saturday evening at the Riglarhaus in Lateis, where local dishes will be paired with music experienced through headphones, under Zampini’s scientific direction. 

The event will continue Sunday with breakfast, sensory activities and a breadmaking workshop.
